Sterling, VA – New tableware designs by Fortessa reflect current culinary trends, as chefs adapt their menus to changing customer tastes and dining diversions in challenging economic times.      

 

With a resurgence in Asian foods, stimulated by Korean and Thai influences, Fortessa offers new multi-service options, reprising its versatile “Ganzu” trays, compartmented for small-bite entrees and exotic delicacies.  Designed with scooped-out ovals set diagonally in all-white rectangles, the trays now come in three sizes – 16.25”, 13.5” and 9.25,” conveniently styled for serving two and three diners who want to share sushi, for instance.  The trays also are perfect for serving sides and desserts or even spices and sauces.  Made of creamy-white bone china, with end-to-end side embossing, the trays add sparkle to a minimal bistro setting or a more formal table. 

 

For F&B professionals who are experimenting with serving smaller portions, as a way of dealing with rising food costs, Fortessa designers also have devised a stylish potpourri of pass plates specifically for tastings and mini-bite foods.  The new collection features an assortment of shapely ovals, squares, compartmented rectangles, and triangles in a range of sizes, each with space for a wine stem.  A super-functional cocktail triangle, for example, has an open keyhole corner that holds and secures a glass.  

 

This attractive array of mini-designs, all crafted of Fortaluxe Superwhite, effectively spawns a second generation of small plates adaptable for specific food portions, as well

as for tapas and amuses-bouche.  The diminutive dishes are making a timely appearance, as well, for lounge service, a growing focus of business as consumers opt for casual dining in the restaurant and hotel bar or lounge.

 

Catching another trend, as leading chefs develop ever-more creative seafood concepts, a new oval platter (14”x7”) is strategically shaped to focus attention on the fish entrée.   Fashioned with slim-lined, elegant simplicity, the fish platter signals a fresh, unembellished style in presentation.  Made of Vitraluxe Superwhite, a novel composition fortified with alumina-oxide, which greatly enhances its strength and all-white color, the platter is a case of new technology shaping today’s tableware.
